Recipes Using Long-Lasting Fresh Produce

I'm actually one of those crazy people who thoroughly enjoys going to the grocery store. I love to see the new seasonal ingredients that parade through the produce section as the year marches on. I often get inspiration for a new recipe, just by a trip to the grocery store.

That being said, our grocery shopping is much more limited these days. In fact, we rely, for the most part, on grocery delivery services like Shipt (similar to Instacart) and Whole Foods Prime free delivery. But with so many others also using these services, it can be difficult to get in line for an order. I find myself filling my cart, then refreshing the screen over and over, until finally there's an opening.

With the limited shopping resources, I'm trying to get a little smarter with each order and choose items with a longer pantry (or refrigerator) life. In addition to canned goods, I'm ordering more long-lasting fresh produce like carrots, potatoes, kale, sweet potatoes, cabbage, cauliflower, apples, oranges, squash, etc. That way, even if it's been a while since my last grocery delivery I can serve a fresh salad or some roasted veggies every day.

We know that we're all in the same boat right now, with the end of this pandemic a ways off. So, we're sharing some of our favorite recipes feature long-lasting fresh produce so you too can limit your trips to the store but still eat well!
